Busy week ahead, we’ve got your covered with the best Southwest Salad. Who said vegetables had to be boring? Check it out!


Ingredients

  • 4 cups Mixed Green Salad Lettuce
  • 1 cup Fresh Pico de Gallo
  • 1 cup Alexia Street Corn
  • 1 can Black Beans
  • 2 Bell Peppers, diced
  • 1 Avocado, sliced
  • 1/4 cup Spicy Ranch Dressing


Instructions

  1. Start by making my Fresh Pico de Gallo, bonus points if you already prepped this for the week, I promise you won’t regret it!
  2. Chop your green pepper and dice your avocado.
  3. Prepare your Alexia Street Corn, follow the instructions on the box. You can also sub this for canned corn, frozen corn or street corn from scratch if you’re feeling fancy.
  4. Drain and rinse your black beans.
  5. Mix all ingredients into a large bowl and drizzle with Whole Foods 365 Spicy Ranch dressing.
