- 4 cups Mixed Green Salad Lettuce
- 1 cup Fresh Pico de Gallo
- 1 cup Alexia Street Corn
- 1 can Black Beans
- 2 Bell Peppers, diced
- 1 Avocado, sliced
- 1/4 cup Spicy Ranch Dressing
Instructions
- Start by making my Fresh Pico de Gallo, bonus points if you already prepped this for the week, I promise you won’t regret it!
- Chop your green pepper and dice your avocado.
- Prepare your Alexia Street Corn, follow the instructions on the box. You can also sub this for canned corn, frozen corn or street corn from scratch if you’re feeling fancy.
- Drain and rinse your black beans.
- Mix all ingredients into a large bowl and drizzle with Whole Foods 365 Spicy Ranch dressing.
