Description

This gluten-free chocolate chip banana bread is the perfect combination of moist, tender banana flavor and rich chocolatey goodness—all without any gluten! Made with simple gluten-free flour, ripe bananas, and a handful of pantry staples, this easy recipe is great for breakfast, snack time, or dessert. 


Ingredients

  • 2 cups Gluten-Free Flour
  • ½ teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • ½ teaspoon Cinnamon
  • 34 ripe Bananas
  • 2 Eggs
  • ½ cup Liquid Coconut Oil
  • 1 teaspoon Vanilla Extract
  • ⅓ cup Maple Syrup
  • ¼ cup Almond Milk 
  • Optional: ½ cup Chocolate Chips 


Instructions

  1. Preheat the oven to 350°F (175°C)
  2. Mix Dry Ingredients: In a medium-sized bowl, mix together the dry ingredients (except for the chocolate chips). Set aside.
  3. Mix Wet Ingredients: In a large bowl, mash the bananas using a fork until smooth. Then, add the remaining wet ingredients and mix well.
  4. Combine the wet and dry ingredients, stirring until smooth. Gently fold in the chocolate chips.
  5. Prepare: Spray and flour your loaf pans (I recommend using two smaller loaf pans), and pour the batter evenly into the pans.
  6. Bake for 55-60 minutes or until a toothpick inserted in the center comes out clean. Baking time may vary depending on your oven.

*Can substitute regular dairy milk for almond milk
