Make these Gluten-Free Snowcap Cookies for the holidays! Chocolatey, soft, and dusted with powdered sugar, they’re the perfect addition to any festive cookie box.

- 1 cup Flour (I used King Arthur Gluten Free 1:1)
- ½ cup Cocoa Powder
- ½ cup Oil
- 2 Eggs
- 1 tsp Vanilla
- 1 cup Sugar
- ½ cup Powdered Sugar
- 1 tsp Baking Powder
Instructions
- Mix together the sugar, cocoa powder, oil, eggs, and vanilla until smooth.
- Add in flour and mix until the batter is creamy and smooth.
- Refrigerate for 3 hours. Set a timer so you don’t forget—trust me, you don’t want to skip this step for the perfect cookies!
- Preheat the oven to 350°F (175°C).
- Using a cookie scoop or spoon, form dough balls and place them on a lined baking tray.
- Roll each dough ball in powdered sugar to cover them in “snow.” (This is a great step for kids to help with—it’s fun!)
- Bake for 10-12 minutes (14 minutes at high altitude). Let cookies rest for 5 minutes before transferring to a cooling rack.
