Description

Make these Gluten-Free Snowcap Cookies for the holidays! Chocolatey, soft, and dusted with powdered sugar, they’re the perfect addition to any festive cookie box.


Ingredients

  • 1 cup Flour (I used King Arthur Gluten Free 1:1)
  • ½ cup Cocoa Powder
  • ½ cup Oil
  • 2 Eggs
  • 1 tsp Vanilla
  • 1 cup Sugar
  • ½ cup Powdered Sugar
  • 1 tsp Baking Powder


Instructions

  1. Mix together the sugar, cocoa powder, oil, eggs, and vanilla until smooth.
  2. Add in flour and mix until the batter is creamy and smooth.
  3. Refrigerate for 3 hours. Set a timer so you don’t forget—trust me, you don’t want to skip this step for the perfect cookies!
  4. Preheat the oven to 350°F (175°C).
  5. Using a cookie scoop or spoon, form dough balls and place them on a lined baking tray.
  6. Roll each dough ball in powdered sugar to cover them in “snow.” (This is a great step for kids to help with—it’s fun!)
  7. Bake for 10-12 minutes (14 minutes at high altitude). Let cookies rest for 5 minutes before transferring to a cooling rack.
