- 2 ripe avocados
- Your favorite salsa (mango salsa for sweetness, medium or hot chunky salsa for heat)
- Sourdough toast or sprouted bread (my favorite is from Dave’s Killer Bread)
- 2 eggs – cooked to your liking, I prefer over-easy for this recipe
Instructions
- Prepare Avocado: Cut the avocados in half, remove the pits, and scoop the flesh into a bowl. Mash with a fork until smooth and creamy.
- Toast Bread: Toast your choice of bread until golden brown and crispy.
- Spread Avocado: Spread a generous amount of mashed avocado onto each slice of toast.
- Cook your Eggs: Over-easy, scrambled however you like. I like to mix in just a little bit of salsa with my eggs as well for added flavor.
- Top with Salsa: Spoon your desired salsa over the avocado toast, spreading it evenly to cover the surface.
- Serve and Enjoy: Serve immediately and enjoy your delicious Salsa Avocado Toast!
