Almond Flour Cookie Base

  • 1 3/4 cups fine almond flour, packed and ready to rock
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/8 teaspoon turmeric (trust me – just a hint for color and a bit of mystery!)
  • 1/3 cup coconut oil
  • 1/4 cup orange juiceĀ 
  • 1 tablespoon orange zestĀ 
  • 1/2 cup brown sugar
  • 1/4 teaspoon orange blossom water (optional but highly recommended for a touch of floral magic)
  • 1 teaspoon vanilla extract
  • 1 egg, at room temperature

Cinnamon Orange Sugar Mix

  • 3 tablespoons cinnamon sugar spice from Primal PalateĀ 
  • 2 tablespoons orange zest (get ready for your kitchen to smell amazing)


Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Combine dry ingredients: In a medium bowl, whisk together flour, baking soda, salt and turmeric. Set aside.
  3. Combine wet ingredients: In a large bowl, mix together the melted coconut oil, brown sugar, and orange juice and if using, orange blossom water.
  4. Add egg and vanilla: Mix in the egg and vanilla extract until combined.
  5. Combine wet and dry ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Roll in Cinnamon Orange Sugar Mix: Scoop 1 tablespoon balls and roll into the cinnamon orange sugar mix.
  7. Bake: Drop spoonfuls of dough onto the prepared baking sheet and bake for 12 minutes, THEN and this is KEY, smash the cookies with a spoon and bake for another 2 minutes to give it that chewy, crisp outside.Ā
