Garlic Tahini Mashed Potatoes

Description

Creamy and healthy Garlic Tahini Mashed Potatoes! This vegan, gluten-free side dish is perfect for cozy fall dinners or your Thanksgiving table. Make it in a Vitamix for the smoothest texture


Ingredients

Scale
  • 3 medium Potatoes 
  • 1/4 cup Garlic Tahini 
  • 2 tablespoons Olive OIl
  • 2 cloves Garlic 
  • 3/4 cup Almond Milk 
  • Salt & Pepper, to taste 
  • Rosemary, to taste


Instructions

  1. Boil potatoes in salted water for approximately 10-15 minutes until soft
  2. Cut boiled potatoes into cubes and place in Vitamix (or other blender)
  3. Add in 1/4 cup of Tahini, 1/2 cup of Almond Milk (reserving 1/4 cup for later), Salt, Pepper, 2 tablespoons of olive oil and whole garlic cloves
  4. Blend until mixture starts to become smooth, adding in the remaining 1/4 cup of almond milk to help create a creamy texture
  5. Store in an airtight container in the fridge for use later or heat on stove top for 5-10 minutes, string occasionally, garnish with rosemary and serve
