Description

These Gluten-Free Pumpkin Flaxseed Muffins are a great way to get your energy and get in the mood for fall.


Ingredients

  • 1 ½ cups of Gluten-free Flour
  • 1 teaspoon Baking Powder 
  • ¼ cup Ground Flaxseed
  • 3 tablespoons Brown Sugar 
  • ¼ cup of Almond Milk 
  • 2 Eggs
  • 3 tablespoons Maple Syrup 
  • 3 tablespoons Pumpkin Butter
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Pumpkin Spice 
  • ½ teaspoon Nutmeg 
  • ⅛ teaspoon All Spice


Instructions

  1. Preheat your oven to 350°F and line a muffin tin with paper liners in every other space to allow for pillow like muffin tops. 
  2. In a large bowl, whisk together the flour, ground flaxseed, pumpkin spice, and baking powder.
  3. In a separate bowl, mix the pumpkin butter, brown sugar, egg, vanilla extract, and milk until smooth and well combined.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  5. Fill each muffin cup about ¾ full with batter.
  6. Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  7. Allow the muffins to cool for 5 minutes before removing them from the tin.
