Easy Sweet Potato and Black Bean Tacos

Description

When you’re craving something hearty, flavorful, and easy to make, these vegetarian tacos with sweet potato and black beans are the ultimate go-to recipe.


Ingredients

  • 2 medium sweet potatoes, peeled and diced
  • 1 tbsp olive oil
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika (optional for extra flavor)
  • Salt and pepper, to taste
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 bell pepper, chopped
  • 1/2 onion, chopped
  • 2 garlic cloves
  • Corn or flour tortillas, warmed on the stove top or in the microwave
  • Toppings: pico de gallo, sliced jalapeños, raw onion, guacamole, cilantro or your favorite toppings


Instructions

Roast the Sweet Potatoes

Roasting sweet potatoes is easy and can be done in your oven or an air fryer if you have one and are in a pinch for time! In a bowl, toss the diced sweet potatoes with olive oil, chili powder, cumin, smoked paprika, salt, and pepper.

  • Air Fryer Preparation: Preheat your air fryer to 400°F. In a bowl, add the seasoned sweet potatoes to the air fryer basket and roast for 10-15 minutes until they’re tender and slightly crispy on the edges.
  • Oven Preparation: Preheat your oven to 425°F (220°C). Spread the seasoned sweet potatoes evenly on a baking sheet and roast for 20-25 minutes until they’re tender and slightly crispy on the edges.

Prepare the Black Bean Mixture

While the sweet potatoes are roasting, grab your blender! Drain and rinse your black beans, chop onions, bell pepper and tomatoes. Add these ingredients, garlic cloves, cumin, onion powder, paprika, chili powder, salt and pepper and blend until smooth.

Assemble the Tacos

Once the sweet potatoes and black beans are ready, start assembling the tacos. Add a scoop of black bean mixture and roasted sweet potatoes to each tortilla. Top with fresh pico de gallo or homemade guacamole for a pop of color and flavor.
