Gluten-Free Parmesan Thyme Popovers

I discovered popovers over the last few years with trips back east. They seem to be a breakfast staple or holiday must-have there so it seemed fitting to try them out here at high altitude and while making them gluten-free.

I have tried a few recipes over the years but decided to use Half Baked Harvests recipe this year seeing as she is also at high altitude and savory rather than plain felt like it would compliment the rest of our Thanksgiving meal.

Now while I did not create this recipe I did make a few tiny modifications such as adding Thyme and using Gluten-Free flour. I also took my own photos as I am not really a recipe creator yet just someone who likes to take photos of the food I make and share the memories that came away with it.

My biggest recommendation for popovers however is to serve them right away or microwave them to steam them into being light and airy should you have leftovers.

Here’s a quick video of the step-by-step I took, you’ll notice I did pour the milk out of a saucepan, this is because I decided to warm the milk up to help with the “steaming” effect popovers typically need.
