Chocolate Chip Banana Bread

As I have gotten older and become more active in my own health and wellness journey as a personal trainer, I try to recreate my favorite recipes by finding ways to make them a bit more nutrient-dense, or even just with less sugar. This recipe unlike most, uses maple syrup and coconut oil instead of cups of sugar, maintaining the sweetness (in addition to the chocolate chips) while not causing your blood sugar to spike after just one bite.

A banana bread recipe sure to create warmth and satisfy any sweet tooth. This banana bread is made using maple syrup instead of cups of sugar.

  • 3-4 Ripe Bananas
  • 2 cups Flour
  • 2 Eggs
  • 1/2 cup Liquid Coconut Oil
  • 1/2 tsp Cinnamon
  • 1 tsp Vanilla
  • 1/2 tsp Baking Soda
  • 1 tsp Baking Powder
  • 1/3 cup Maple Syrup
  • 1/2 cup Chocolate Chips
  • 1/4 cup Milk

    Preheat oven to 350* F

    In a medium size bowl, Mix together dry ingredients (except for Chocolate Chips) and set aside.

    In a large bowl, Mash Bananas using a fork then add the remaining wet ingredients and mix until smooth.

  • 4)

    Combine wet and dry ingredients and stir until smooth, then fold in chocolate chips

  • 5)

    Spray and flour loaf pans and then place in the oven for 55-60 minutes. Timing may vary based on oven.

Notes

  • I frequently use gluten-free 1:1 flour but regular flour works well too!
  • If you don’t like coconut, swap coconut oil for olive oil or vegetable oil
  • Feel free to add walnuts or swap the chocolate chips for walnuts to reduce sugar further.
