As the summer begins to wind down, just like our wardrobe it’s time for some transitional recipes. This refreshing summer avocado grapefruit salad recipe gives you both the vibrant freshness you crave in the summer and the cozy warmth as the temperatures start to fall. 

After a busy few weeks, putting together easy, nutrient rich salad recipes makes me feel like I sort of have my life together. Inspiration sparked for this citrus salad when I spotted some grapefruit in my grocery store’s “last chance” or “going bad soon” section. I knew at home I had a golden beet and as I rummaged through my fridge that’s when it all came together. 

Enough about how we got here, I know you’re anxious to make this yourself so let’s jump right into what you’ll need.

  • Grapefruit 
  • Avocado 
  • Cucumber 
  • Golden Beet 
  • Honey 
  • Balsamic Vinegar 
  • Olive Oil 
  • Salt & Pepper

How to Make this Healthy Salad

Roasting the Golden Beets 

You can roast your beets in an oven or an air fryer. For this recipe I used my Ninja Dual Basket air fryer. I sliced my beet into thin circles, coated them in a little olive oil and then tossed them into my air fryer on the “roast” setting for 10 minutes. This should soften them slightly and bring out their beautiful sweet flavors!

Dicing the Cucumber & Avocado

It can be therapeutic to chop vegetables, they say. For this recipe you’ll want to dice the cucumbers into small squares. To do this, start by cutting your cucumber in half and then in half long ways so they lay flat. I then make straight lines with my knife in both directions to create small squares. For your avocado, you can use a knife or this handy avocado slicer to create your squares! I find if the avocado is still slightly hard cutting squares is easier, if your avocado is too soft you may want to opt for simple slices!

This refreshing summer salad is my ideal lunch, its light yet also filling. It would also do well as a dinner party salad, perfect for sharing at those end of summer cookouts. As school is back in session, meal prepping this salad and the dressing on the side could also work well for those busy weekdays.

Can I Make This Salad Ahead of Time?

Yes! Just prepare the dressing on the side and mix when you’re ready to eat to avoid a soggy salad. The golden beets still taste delicious even after they’ve cooled down! 

What Other Vegetables Can I Use?

An orange could be used in place of the grapefruit. Green or orange bell pepper could also be a wonderful addition!

How Long Will This Salad Last?

The salad will last 2-3 days in a glass container, without the dressing. It is also recommended that you don’t add avocado until you’re ready to eat to avoid oxidation that causes the avocado to brown.

  • 1 Golden Beet
  • 2 tablespoons Olive Oil

Salad Base

  • 4 cups Mixed Greens
  • 1 Cucumber
  • 1/2 Avocado

Holiday Balsamic Vinaigrette

  • 3 tablespoons Honey
  • 2 tablespoons Balsamic Vinaigrette
  • 1/4 cup Olive Oil
  • Salt & Pepper, To Taste

Perfecting the Holiday Balsamic Vinaigrette

Roasted Golden Beets

  • 1)

    Slice your golden beet into thin circles and toss in a drizzle of olive oil

    Add your beets spread evenly into your air fryer on the roast setting for 10 minutes
