Fall is in the air, so let’s get to baking! I love nothing more than making anything with pumpkin spice or apples the second September hits. Today I am going to share with you a new way to level up your pumpkin bread with this Trader Joe’s Pumpkin Spice Apple Bake.

As the leaves begin to turn and the air takes on that crisp, familiar chill, there’s nothing quite like the comforting aroma of spices filling your kitchen. Fall is the perfect time to indulge in cozy, homemade desserts that celebrate the season’s best flavors. If you’re anything like me, Trader Joe’s is your go-to for seasonal inspiration, and their Pumpkin Bread Mix is a fall favorite that never disappoints.

But why stop at just pumpkin bread? This year, I’m taking things up a notch with a delightful twist—introducing the Trader Joe’s Pumpkin Spice Apple Bake. This recipe combines the rich, spiced goodness of pumpkin bread with tender cinnamon apples and crunchy walnuts, all baked to perfection in individual ramekins. Whether you’re looking to impress guests or simply treat yourself to a warm, comforting dessert, these mini bakes are the perfect solution.

Not only is this dessert incredibly easy to make, but it also brings together the very best of fall flavors in a way that feels indulgent yet wholesome. Ingredients for Trader Joe’s Pumpkin Spice Apple Bake

Pumpkin Bread Base 

1 box Trader Joe’s Pumpkin Bread Mix

  • This mix serves as the base for our flavorful bake, bringing a warm, spiced pumpkin flavor that’s perfect for fall desserts.
  • For the bread mix part of this recipe you’ll also need coconut oil and 2 eggs in order to follow the instructions on the box. 
  • I used the gluten-free version but you can also use the regular bread mix!

Cinnamon Apples 

2 medium apples, peeled, cored, and diced

  • I recommend using a crispy gala apple which pairs well with the cinnamon and pumpkin baking spices. 

1 tablespoon of Maple Syrup

  • Maple Syrup helps to bring out and elevate the natural sugars in the apples 

1 teaspoon Cinnamon

  • Ground cinnamon adds warmth and spice, complementing the pumpkin flavors in the bread.

2 tablespoons Brown Sugar

  • Brown sugar adds extra sweetness and a hint of molasses, enhancing the depth of flavor in the apples.

Nutrient Boosters 

Walnuts

  • Chopped walnuts add a crunchy contrast and a boost of healthy fats.

Flax Seed

  • Flax seed offers a dose of omega-3 fatty acids and fiber, making your dessert a bit more wholesome.

Preparing the Cinnamon Apples 

  • To prepare the cinnamon apples, dice your apple into small cubes, toss in coconut oil, maple syrup, sugar and cinnamon. 
  • Place in a small pan on the stove over medium/high heat, with the lid on for the first 5 minutes. 
  • As the apples begin to bubble, remove the lid and stir occasionally for another 8 minutes. 
  • I used a gas stove top and it took about 13 minutes to bubble and thicken to create soft and caramelized cinnamon apples 

Making the Trader Joe’s Pumpkin Bread Mix 

  • Follow the instructions on the box to make the bread mix, directions differ if you bought the gluten-free version or the regular version. Keep your mix in a bowl and set aside, you will spoon this and your cinnamon apples into the individual ramekins before baking. 

Putting it all together

  • Add in flax seed to the bread mix for a nutrient boost, then evenly distribute the bread mix, apples and a spoon full of walnuts into each ramekin you have. 
  • If you don’t have ramekins you can still create this recipe in a bread pan, or square baking dish, it will taste and bake just the same! 

Baking Tips

  • Make sure apples are evenly coated as they cook
  • Spray your ramekins with oil to prevent sticking 
  • Use a toothpick to test doneness, toothpick should come out clean

Ingredients

Cinnamon Apples

  • 1 large Apple, Diced into cubes
  • 1 tablespoon Coconut Oil
  • 1 tablespoon Maple Syrup
  • 2 tablespoons Brown Sugar
  • 1 teaspoon Cinnamon

Pumpkin Bread

  • 1 box Trader Joe's Pumpkin Bread Mix
  • 1/2 cup Coconut Oil
  • 2 Eggs

Method

Preparing the Cinnamon Apples

  • 1)

    Core and dice the apple into cubes

  • 2)

    In a small bowl, mix apples, coconut oil, maple syrup, brown sugar and cinnamon until evenly coated

  • 3)

    In a small saucepan on the stove, place the cinnamon apple mixture over medium/high heat

  • 4)

    Cover and let the mixture come to a bubble, takes about 5 minutes on a gas range stove top

  • 5)

    After 5 minutes when the mixture is bubbling slightly, remove the lid and continue to stir regularly for another 8 minutes

  • 6)

    Remove from heat and set aside to cool slightly while you prepare the pumpkin bread mix

Prep the Pumpkin Bread

  • 1)

    Preheat the oven to 350* F

  • 2)

    Follow instructions as listed on the box for best preparation of the mix

Bring it all together!

  • 1)

    Evenly dish out pumpkin bread mix, cinnamon apples and walnuts into individual ramekin dishes. If you do not have ramekin dishes you can use a bread pan or square baking dish as well

  • 2)

    Place in oven for 50-55 minutes, use a toothpick to check doneness level and add increments of 2-3 minutes as needed.
