This recipe was inspired by the weather beginning to cool and a need to use the many white potatoes I over purchased. I like mashed potatoes but am not a big plain potato and gravy gal. I like garlic so I thought why not try to make some mashed potatoes using my new favorite kitchen staple Roasted Garlic Tahini from Sprouts.

For these vegan garlic mashed potatoes, you’ll need: tahini, garlic, Yukon gold potatoes, olive oil, and a little salt and pepper. These ingredients come together to create a smooth, creamy dish you’ll love.

Step-by-Step Guide

  1. Start by boiling your Yukon gold potatoes until fork-tender. 
  2. Then, cut the boiled potatoes into cubes and place in your Vitamix blender
  3. Add in the tahini, garlic, salt, pepper, almond milk and a splash of olive oil for an ultra-creamy texture. 
  4. Blend on medium speed, adding additional oil or almond milk as needed, until smooth. 
  5. Store in airtight container in the fridge until ready to serve or heat on stove top for 5 minutes on medium heat, stirring occasionally. 

Tips for the Best Garlic Tahini Mashed Potatoes

For an even richer flavor, roast the garlic before blending. You can also experiment by adding herbs like rosemary or parsley for an extra burst of flavor.

Creamy and healthy Garlic Tahini Mashed Potatoes! This vegan, gluten-free side dish is perfect for cozy fall dinners or your Thanksgiving table. Make it in a Vitamix for the smoothest texture

Ingredients

  • 3 medium Golden Potatoes
  • 1/4 cup Tahini, I used Roasted Garlic Tahini from Sprouts
  • 2 tablespoons Olive Oil
  • 2 Garlic Cloves
  • 3/4 cup Almond Milk
  • Salt & Pepper, To taste
  • Rosemary, To taste

Method

  • 1)

    Boil potatoes in salted water for approximately 10-15 minutes until soft

  • 2)

    Cut boiled potatoes into cubes and place in Vitamix (or other blender)

  • 3)

    Add in 1/4 cup of Tahini, 1/2 cup of Almond Milk (reserving 1/4 cup for later), Salt, Pepper, 2 tablespoons of olive oil and whole garlic cloves

  • 4)

    Blend until mixture starts to become smooth, adding in the remaining 1/4 cup of almond milk to help create a creamy texture

  • 5)

    Store in an airtight container in the fridge for use later or heat on stove top for 5-10 minutes, string occasionally, garnish with rosemary and serve
