The holiday season is upon us, and that means one thing – it’s time for the annual cookie exchange! If you’re looking to stand out and spread some cheer, our family’s unique recipe for Cherry Chip Cookies is the perfect treat to dazzle your fellow cooking enthusiasts.

Cherry Chips: A Burst of Holiday Joy

Imagine biting into a cookie that combines the rich, buttery goodness of a classic shortbread, with the sweet crunch of frosted flakes and delightful cherry chips. These delightful treats have been a staple in our family for the holidays for a while and they never fail to steal the spotlight during holiday gatherings.

Ingredients:

• 2 cups flour

• 1/8 tsp salt

• 1 cup soft butter

• 1/2 cup sugar

• 1 egg yolk

• 1 tsp Almond Extracts (or vanilla)

• 3/4 cup of frosted flakes (crumbled)

• 1 package of cherry chips (find them here on Amazon!)

  • 1 bag Cherry Chips , Find them on Amazon or other specialty stores
  • 1 cup Butter , Softened
  • 2 cups Flour , I used gluten free 1:1
  • 1/2 cup sugar
  • 1/8 tsp salt
  • 1 tsp almond or vanilla extract
  • 1 egg yolk
  • 3/4 cup crushed frosted flakes

Method

Instructions

  • 1)

    Sift the flour and salt together, set aside

  • 2)

    Cream the butter and sugar until light and fluffy

  • 3)

    Mix in the egg yolk and almond (or vanilla) extract

  • 4)

    Add flour and mix until smooth

  • 5)

    Fold in the cherry chips and cornflakes, the batter will be really thick

  • 6)

    Roll into 1″ balls and place onto un-greased cookie sheet, press down with a fork and lightly dust with sugar

  • 7)

    Bake at 375 for about 9 minutes, may need to adjust based on your oven but this is where I typically start!

     

    If the cookies go flat, your butter was too soft, it is also best to make these cookies very small, think “bite sized”!
