This salad was born out of a need to use up the many cucumbers that my garden has produced this summer. We’ve experienced record high temperatures the last month here in Colorado so I was craving something refreshing. This Cucumber Strawberry Salad Recipe with a Honey Lime Dressing is a refreshing, vibrant dish that’s perfect for summer days.
Ingredients You’ll Need
- Cucumbers: I used (2) cucumbers from my garden but english cucumbers or whatever your local market has will work great! Cucumbers are naturally high in water content, mild in flavor and give you that satisfying crunch.
- Strawberries: I recommend soaking your strawberries in a 2:1 ratio of cold water and vinegar for 10 minutes, rinse and then allow to dry. Once they are dry, slice thin.
- Limes: You can use fresh limes or bottled lime juice for this recipe. You’ll need the juice of (1) lime or 2 tablespoons of lime juice. If you don’t like the sourness of lime juice, drizzle and mix with 1 tablespoon of honey to sweeten and make a lime juice dressing.
- Honey: 1 tablespoon of honey gives this recipe the added sweetness it deserves
- Salt: You’ll need just a pinch of salt at the end, I love the contrast this gives the salad but it is totally optional!

- Blueberries
- Nuts
How to Make this Refreshing Salad
- Start by slicing your cucumber into thin circles
- Destem and thinly slice your strawberries
- Make the Honey Lime Dressing, mix 2 tablespoons of honey and 2 tablespoons of mine juice, add a pinch of salt and stir to combine.
- Add cucumbers and strawberries to a bowl, then drizzle on dressing and enjoy!
