Gluten-Free Cherry Chocolate Chip Cookies

Today, I’m excited to share a special recipe that holds a dear place in my heart – Gluten-Free Cherry Chocolate Chip Cookies. These cookies are inspired by a family tradition passed down from my mother-in-law, who introduced me to Cherry Chips, just like chocolate chips but with cherry flavor. Traditionally used in our family’s Christmas cookies, I decided to put my own twist on them by adding some pecans, oats, and of course, mini chocolate chips. The result? A perfectly balanced cookie with just the right amount of sweetness!
Ingredients
- 1 egg, at room temperature
- 1 stick of butter, at room temperature
- 1 tablespoon vanilla extract
- 3/4 cups oats
- 1 cup all-purpose flour
- 1 teaspoon baking soda
- 1/2 cup brown sugar
- 1/4 cup mini chocolate chips
- 1/4 cup cherry chips (can be purchased on Amazon)
- 1 tablespoon chopped pecans (optional)
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C).
- Mix Dry Ingredients: In a medium bowl, mix together the flour, oats, and baking soda. Set aside.
- Cream Butter and Sugar: In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy.
- Add Egg and Vanilla: Beat in the egg and vanilla extract until well mixed.
- Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in Chips and Pecans: Gently fold in the mini chocolate chips, cherry chips, and chopped pecans until evenly distributed throughout the dough.
- Shape and Bake: Roll the dough into balls (or use the OXO scooper for no mess dough balls) and place them on a baking sheet lined with parchment paper. Bake for about 17 minutes, or until the edges are golden brown.
- Cool and Enjoy: Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Enjoy with a glass of milk or your favorite hot beverage!
