High Protein Italian Pasta Salad

The perfect accompaniment to any dinner and a fantastic lunch on its own!

Since I can remember when summer hit we’d eat outside, usually grill and more often than not we’d have some form of pasta salad. Growing up a competitive figure skater, pasta salads were also staple pre-competition meals for me.

When I went gluten-free about 7 years ago this was a recipe I let go to the wayside. It wasn’t until recently and until I realized how well Banza’s chickpea pasta holds up that I decided to give this recipe a chance.

Banza pasta is a staple for us, its higher in protein than most pasta, its gluten-free and its great leftover, something I can’t say about every gluten-free pasta. I love to eat this pasta salad after its chilled for a few hours, its a refreshing side dish and an even better lunch. When the sun is shining you’ll usually find me on my back patio taking a break from work, whipping this up for lunch and enjoying a sparkling water, its my little slice of heaven.

As you’ll notice in the recipe, I like to keep my mix-ins classic, think olives, salami, tomatoes. I have been to dinner parties and seen others mix up what they put in to make it their own though. Feel free to get creative, want to add some spice with a jalapeño? have leftover broccoli? like green onion on everything? Try it out – I really don’t think you can go wrong.

  • 8 oz Banza Chickpea Pasta
  • 1/2 cup Chopped Salami
  • 1 cup Chopped Cucumbers
  • 1 can Black Olives
  • 1 cup Cherry Tomatoes
  • 1 handful Shredded Mozzarella Cheese
  • 1 handful Basil Leaves
  • 2 cups Italian Dressing

Method

Instructions

    Cook pasta according to the box and drain

    Chop up all veggies and ingredients, you can completely customize what you put in this and can truly make this salad shine!

  • 3)

    Combine pasta and chopped mix-ins, stir in italian dressing of choice and serve immediately or chill if you prefer a colder pasta salad.
