Can’t stop won’t stop with the pumpkin recipes as I am in full fall mode! This make ahead pumpkin pie overnight oats recipe is a great way to make sure you have the energy to take on the day! 

What makes this recipe so good? 

Not only are these pumpkin pie overnight oats super easy to make, but they’re also packed with fiber and protein thanks to oats, chia seeds, and a touch of plant-based protein powder. 

Thanks to my not so secret ingredient, Pumpkin Butter these oats will have you second guessing if you’re eating pie for breakfast! Store bought pumpkin butter will work fine but if you’re feeling fancy I highly recommend checking out Minimalist Baker’s 20 Minute Pumpkin Butter recipe.

Ingredients you’ll need

This easy fall breakfast can come together quickly but you’ll need a few ingredients on hand. 

  • Oats 
  • Almond Milk 
  • Chia Seeds
  • Flax Seed
  • Unflavored Protein Powder, I love Orgain for this! 
  • Maple Syrup 
  • Cinnamon 
  • Pumpkin Spice 
  • Pumpkin Butter, as mentioned above you can make your own or store bought will work just fine.

Step by Step 

  1. In a glass jar or bowl combine your oats, pumpkin butter, flax seeds, protein powder, chia seeds, almond milk and maple syrup.  
  2. Stir or shake to combine and store in the fridge overnight 
  3. Top with walnuts and a sprinkle of cinnamon, enjoy on the go!

Can I swap out the pumpkin butter for just canned pumpkin? 

  • Yes, just note that the recipe won’t be as sweet so you may want to add maple syrup or honey to maintain the same flavor profile. 
  • You can also purchase pre-made jarred pumpkin butter at the store to use! 

How long will these overnight oats last? 

  • In an airtight glass jar these overnight oats will last fresh in the fridge for up to a week 

Do I have to use protein powder in this recipe? 

  • No, it is totally optional though you may want to reduce the amount of milk or add 1-2 tablespoons of oats

Ingredients

Overnight Oats Base

  • 1/2 cup Quick or Old Fashioned Oats
  • 1/2 cup Almond Milk
  • 1 tablespoon Chia Seeds
  • 1 tablespoon Flax Seed
  • 1 teaspoon Cinnamon
  • 1 scoop Unflavored Protein Powder , 32 grams

Pumpkin Variation

  • 1/2 cup Pumpkin Butter
  • 2 teaspoons Pumpkin Spice
  • 1 tablespoon Maple Syrup

Method

  • 1)

    In a glass jar mix together the oats, milk, chia seeds, flax seeds, protein powder and cinnamon.

    Place sealed in refrigerator overnight or for at least 8 hours.

  • 3)

    Remove from fridge and top with walnuts and enjoy!
