Ingredients
Ingredients
- 1 bag Cherry Chips , Find them on Amazon or other specialty stores
- 1 cup Butter , Softened
- 2 cups Flour , I used gluten free 1:1
- 1/2 cup sugar
- 1/8 tsp salt
- 1 tsp almond or vanilla extract
- 1 egg yolk
- 3/4 cup crushed frosted flakes
Method
Instructions
- 1)
Sift the flour and salt together, set aside
- 2)
Cream the butter and sugar until light and fluffy
- 3)
Mix in the egg yolk and almond (or vanilla) extract
- 4)
Add flour and mix until smooth
- 5)
Fold in the cherry chips and cornflakes, the batter will be really thick
- 6)
Roll into 1″ balls and place onto un-greased cookie sheet, press down with a fork and lightly dust with sugar
- 7)
Bake at 375 for about 9 minutes, may need to adjust based on your oven but this is where I typically start!
If the cookies go flat, your butter was too soft, it is also best to make these cookies very small, think “bite sized”!
