Indulge in this unique holiday cookie with sweet cherry chips and the crunch of frosted flakes. These bite sized cookies are sure to be a hit at your next holiday party!

  • 1 bag Cherry Chips , Find them on Amazon or other specialty stores
  • 1 cup Butter , Softened
  • 2 cups Flour , I used gluten free 1:1
  • 1/2 cup sugar
  • 1/8 tsp salt
  • 1 tsp almond or vanilla extract
  • 1 egg yolk
  • 3/4 cup crushed frosted flakes

  • 1)

    Sift the flour and salt together, set aside

  • 2)

    Cream the butter and sugar until light and fluffy

  • 3)

    Mix in the egg yolk and almond (or vanilla) extract

  • 4)

    Add flour and mix until smooth

  • 5)

    Fold in the cherry chips and cornflakes, the batter will be really thick

  • 6)

    Roll into 1″ balls and place onto un-greased cookie sheet, press down with a fork and lightly dust with sugar

  • 7)

    Bake at 375 for about 9 minutes, may need to adjust based on your oven but this is where I typically start!

     

    If the cookies go flat, your butter was too soft, it is also best to make these cookies very small, think “bite sized”!
