Make these healthy Maple Roasted Carrots with a sweet maple glaze and rosemary, an easy side dish for any meal or holiday gathering

Ingredients

  • 1 bag carrots
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon brown sugar
  • 4 tablespoons maple syrup
  • 1 teaspoon salt & pepper
  • 1 teaspoon oregano
  • 2 sprigs rosemary

Method

  • 1)

    Preheat your oven to 325 F

  • 2)

    Wash, peel and cut off the ends of the carrots

  • 3)

    In a small bowl make the maple mixture by mixing together the olive oil, balsamic vinegar, maple syrup, salt, pepper and oregano

  • 4)

    In a square baking dish oil and then lay carrots evenly along the bottom

  • 5)

    Evenly pour the maple mixture over your carrots, sprinkle the brown sugar on top, cover with foil and place in the oven

  • 6)

    Cook for 50 minutes, check doneness with a fork, the carrots should be soft
