Ingredients

Roasted Beets

  • 1 Golden Beet
  • 2 tablespoons Olive Oil

Salad Base

  • 4 cups Mixed Greens
  • 1 Cucumber
  • 1/2 Avocado

Holiday Balsamic Vinaigrette

  • 3 tablespoons Honey
  • 2 tablespoons Balsamic Vinaigrette
  • 1/4 cup Olive Oil
  • Salt & Pepper, To Taste

Perfecting the Holiday Balsamic Vinaigrette

Roasted Golden Beets

  • 1)

    Slice your golden beet into thin circles and toss in a drizzle of olive oil

    Add your beets spread evenly into your air fryer on the roast setting for 10 minutes

Dicing the Cucumber & Avocado

  • 1)

    Dice the cucumbers into small squares. To do this, start by cutting your cucumber in half and then in half long ways so they lay flat. I then make straight lines with my knife in both directions to create small squares. For your avocado, you can use a knife or this handy avocado slicer to create your squares! I find if the avocado is still slightly hard cutting squares is easier, if your avocado is too soft you may want to opt for simple slices!

Putting it All Together

    Add mixed greens to a bowl, with the diced cucumbers, sliced grapefruit and roasted beets. Toss with the honey balsamic dressing and enjoy!
