Whip up this quick, easy, and nutritious rotisserie chicken salad using whatever treasures you find in your fridge. A medley of flavors, a burst of freshness – dinner just got upgraded!
Ingredients
- 1 cup shredded chicken , I used rotisserie from Costco which goes a long way for only $5!
- 1 cucumber , peeled and chopped
- 1 red pepper , chopped
- 1 handful cherry tomatoes
- 2 tbs Lime Crema, I use Target's Good & Gather

Prep your chicken and cut up your veggies, you can customize this to your hearts desire with whatever you have in your fridge! – say goodbye to food waste!

Toss in a bowl with salt and pepper, get fancy and add garlic powder or paprika, maybe even ranch seasoning if you plan to use a light dressing
- 3)
Dress your chicken salad with your favorite sauce, keep it light with olive oil or add a drizzle of balsamic, my favorite however is using Good & Gather’s lime crema sauce from Target!
