Ingredients

  • 1 Avocado
  • 2 Eggs , cooked to your liking
  • 3 tbs Salsa, mix in your favorite with the eggs, more or less depending on preference!
  • 1 slice bread , I recommend sourdough or sprouted bread for added gut benefits!

Method

  • 1)

    Prepare Avocado: Cut the avocados in half, remove the pits, and scoop the flesh into a bowl. Mash with a fork until smooth and creamy.

  • 2)

    Toast Bread: Toast your choice of bread until golden brown and crispy.

  • 3)

    Spread Avocado: Spread a generous amount of mashed avocado onto each slice of toast.

  • 4)

    Cook your Eggs: Over-easy, scrambled however you like. I like to mix in just a little bit of salsa with my eggs as well for added flavor.

    Top with Salsa: Spoon your desired salsa over the avocado toast, spreading it evenly to cover the surface.
