Ingredients
- 4 cups Mixed Greens
- 1 cup Fresh Pico de Gallo , Checkout my fresh pico recipe!
- 1 cup Street Corn , In a pinch? Use Alexia Street Corn
- 1 can Black Beans
- 2 Bell Peppers
- 1 Avocado
- 1/4 cup Spicy Ranch
Method
- 1)
Start by making my Fresh Pico de Gallo, bonus points if you already prepped this for the week, I promise you won’t regret it!

Chop your green pepper and dice your avocado.
- 3)
Prepare your Alexia Street Corn, follow the instructions on the box. You can also sub this for canned corn, frozen corn or street corn from scratch if you’re feeling fancy.

Drain and rinse your black beans.
- 5)
Mix all ingredients into a large bowl and drizzle with Whole Foods 365 Spicy Ranch dressing.
