Busy week ahead, we've got your covered with the best Southwest Salad. Who said vegetables had to be boring? Check it out!

Ingredients

  • 4 cups Mixed Greens
  • 1 cup Fresh Pico de Gallo , Checkout my fresh pico recipe!
  • 1 cup Street Corn , In a pinch? Use Alexia Street Corn
  • 1 can Black Beans
  • 2 Bell Peppers
  • 1 Avocado
  • 1/4 cup Spicy Ranch

Method

  • 1)

    Start by making my Fresh Pico de Gallo, bonus points if you already prepped this for the week, I promise you won’t regret it!

  • 2)

    Chop your green pepper and dice your avocado.

  • 3)

    Prepare your Alexia Street Corn, follow the instructions on the box. You can also sub this for canned corn, frozen corn or street corn from scratch if you’re feeling fancy.

  • 4)

    Drain and rinse your black beans.

  • 5)

    Mix all ingredients into a large bowl and drizzle with Whole Foods 365 Spicy Ranch dressing.
