One look at this gluten-free cinnamon vanilla granola recipe and you’re going to be sold. I know I was the minute I laid my eyes on the warmly colored granola. If anything, it looks like it would smell absolutely delicious, and it does – it smells like warm cinnamon rolls. It tastes creamy and smooth with subtle hints of vanilla lingering on your tongue as you crunch through the compact granules.

Why homemade gluten-free cinnamon vanilla granola?

I recently hit the midway point of my fitness nutrition specialist program and have really been focusing on looking at nutrition labels. Due to some recent family health issues, the topic of eating better is a hot one in this household. We’re trying to reduce sugar, get more protein, and eat more vegetables all to ensure we continue to live healthy, happy, and long lives.

I have always been a big fan of granola and have gone back and forth between buying it from the store and making my own. We recently took a closer look at the label of one of our favorite granolas and the number of additives and sugar blew me away. I decided it was time to change…Making gluten-free granola is super easy, and even better it warms up your house and provides an elegant aroma similar to that of a simmer pot or Potpourri. Win-win-win!

Ingredients for Gluten-Free Granola

  • Gluten-Free Oats
  • Honey or Maple Syrup
  • Vanilla
  • Cinnamon
  • Pecans
  • Coconut Oil

Instructions

  1. Preheat your oven to 325* F, and line a baking sheet with parchment paper. I use a roasting pan as I like having the handles to help shake around my granola at the halfway point!
  2. In a large bowl mix together all the ingredients
  3. Spread onto the lined baking sheet and place in the oven
  4. Let bake for 15 minutes, at the halfway point toss to ensure the granola is evenly toasted (and to get the aroma into your home!)
  5. Return to the oven and bake for a final 15 minutes, let the granola cool and transfer to mason jars for storage

Modifying your Granola

The best part of making your own granola at home is that you can completely customize it. Do you prefer more crunch? – add some almonds or pecans. Do you like dried fruit? – throw it in there! The amount you make and how you make it are totally up to you, so I hope you have a little fun with this!

  • 3 cups of Gluten-Free Oats
  • 1/3 cup of Maple Syrup
  • 1/4 cup of Liquid Coconut Oil
  • 1 tablespoon of Vanilla Extract
  • 1 1/2 cups of Pecans, chopped
  • 1 teaspoon Cinnamon
