Ingredients You’ll Need
- 1 cup of Oats
- 1/4 cup of Unflavored Protein Powder
- 1 tablespoon Flax Seed
- 3 tablespoons Hot Water
- 1/4 cup Almond Butter
- 2 tablespoons Date Paste
- 2 tablespoons Maple Syrup
- 1 teaspoon Vanilla Extract
- 1/3 cup Chopped Pistachios
- 1/3 cup Dried Cranberries
How to Make Cranberry Pistachio Energy Bites
- Blend the dry ingredients: In a food processor, pulse the oats, dried cranberries, pistachios, chia seeds, ground flaxseed, and sea salt until finely chopped.
- Mix the wet ingredients: In a separate bowl, stir together the honey (or maple syrup), almond butter, and vanilla extract until smooth.
- Combine everything: Add the dry mixture to the wet ingredients and mix until well combined. The mixture should be sticky enough to hold together. If too dry, add a little more honey or almond butter.
- Form the bites: Roll the mixture into small balls, about 1 inch in diameter. You should get around 12-15 bites.
- Chill: Place the energy bites on a parchment-lined tray and refrigerate for at least 30 minutes before serving. Store in an airtight container in the fridge for up to one week.

Instructions
- Start by mixing the flax seed and hot water, let sit for 10 minutes
- After the mixture has gelled, in a large bowl mix all ingredients together
- With a large spoon or cookie scoop, form balls and place in a plastic storage container
- Store in the fridge for up to 10 days
