Tips for Success
For the best caramelization, make sure the carrots are spread out in a single layer on the baking dish. Crowding the pan will cause them to steam rather than roast.
Adjust the sweetness to your preference by experimenting with the amount of maple syrup and brown sugar. If you want a more savory flavor, try adding extra rosemary or a dash of cayenne pepper.
If you’re prepping these for a Thanksgiving meal, you can roast the carrots ahead of time and simply reheat them in the oven for 5-10 minutes before serving.
These Maple Roasted Carrots are the perfect addition to any meal, whether you’re looking for an easy and healthy side dish for your next weeknight dinner or a flavorful option for your Thanksgiving spread. The combination of sweet maple syrup, savory rosemary, and caramelized carrots is sure to be a crowd-pleaser.
