Breakfast Quiche

Whether you’re feeding a large crowd, meal prepping for the week, or simply enjoying a slow weekend breakfast, this Breakfast Quiche is a winner. It’s loaded with eggs, veggies, sausage (or bacon, depending on what’s on hand), and a layer of hash browns for added texture and flavor. Plus, it’s super customizable—use whatever veggies you have left in the fridge before they go bad!

I originally created this recipe as a twist on the Christmas casserole my mom used to make. After cutting out the breadcrumbs, I wanted something that was still hearty but packed with vegetables. Over time, this recipe evolved to include a hash brown layer, which gives the quiche the perfect base. Whether you make it with sausage, bacon, or another protein, this quiche is an easy go-to that always satisfies.

Ingredients you’ll need for this quiche

  • 2 cups Hash Browns
  • 1 lb Cooked Ground Sausage
  • 2 cups Spinach
  • ⅓ cup Green Onion
  • ¼ cup Onion, diced
  • 10 Eggs
  • ½ cup Egg Whites
  • Trader Joe’s Ranch seasoning, to taste

Instructions

  1. Preheat oven to 350°F 
  2. Cook ground sausage on medium heat on stove top
  3. Whisk together the eggs and egg whites
  4. Add in cooked sausage, chopped veggies and ranch seasoning 
  5. Spray 13″x9″ glass baking pan 
  6. Layer hash browns on the bottom of the baking dish 
  7. Add in egg mixture 
  8. Bake for 30 minutes, checking for doneness with a fork 
  9. Serve & Enjoy! 

Christmas Traditions

I started making this recipe when I wanted to recreate my mom’s Christmas casserole, a tradition in our house growing up. After cutting out breadcrumbs, I needed something filling and veggie-packed. My first attempt was simply eggs, bacon, and spinach—it was good, but I knew I could improve it. Over the years, this quiche has evolved to include hash browns as a base, which adds a bit of texture that’s missing with just eggs. I love how versatile this recipe is—it’s always a hit, whether I’m serving it for a holiday breakfast or prepping for busy weekdays.

Storage Suggestions

  • Fridge: Store the quiche in an airtight container in the refrigerator for up to 5 days. It’s perfect for meal prep!
  • Freezer: You can also freeze individual slices for up to 3 months. Just reheat them in the microwave or oven when you’re ready to enjoy.
