If you’re looking for a versatile side dish that’s both delicious and packed with fiber for digestive health, these Roasted Brussels Sprouts with Bacon and Balsamic are the perfect addition to any meal. With the savory crunch of roasted bacon, a sweet and tangy drizzle of balsamic glaze, and the natural richness of Brussels sprouts, this dish pairs well with almost any main course—from roasted chicken to a holiday ham.

Roasting Brussels sprouts brings out their natural sweetness, while the addition of crispy bacon and balsamic glaze elevates the flavor profile to new heights. Whether you're serving this for a holiday gathering or a weeknight dinner, it's a hit every time!

Ingredients:

  • 6 cups Brussels sprouts, halved
  • 1 cup white onion, diced
  • 5 slices bacon, chopped
  • ⅓ cup balsamic glaze
  • ⅓ cup olive oil

Instructions:

  1. Preheat the oven to 400°F.
  2. Wash and halve the Brussels sprouts. Set aside.
  3. Chop the bacon and onion, then mix them with the Brussels sprouts in a large bowl. Drizzle with olive oil and toss to coat evenly.
  4. Lay the Brussels sprouts mixture on a baking sheet in a single layer.
  5. Roast for 30-40 minutes, stirring halfway through to ensure even cooking. The Brussels sprouts should be crispy on the outside and tender on the inside.
  6. Once roasted, drizzle with balsamic glaze and serve immediately.

A Rising Star Side

Brussels sprouts weren’t always my favorite, but once I learned how to roast them with bacon, they became a staple side dish in my kitchen. The key is roasting them until they’re crispy on the edges and caramelized—paired with the savory bite of bacon and a tangy balsamic drizzle, they’re hard to resist! Whether I’m preparing a weeknight dinner or putting together a holiday spread, these Brussels sprouts always end up being a favorite at the table. Plus, they’re packed with fiber, which makes them a healthy choice, too!

Pairing Tip: These roasted Brussels sprouts are perfect with just about any main dish. Try serving them alongside a Tomato soup or Herb-Roasted Chicken for a complete, balanced meal. They’re also a fantastic holiday side dish when paired with a Quinoa Orange and Maple Cinnamon Salad for a mix of sweet and savory on the table.

Storage Suggestions

  • Fridge: Store any leftovers in an airtight container for up to 3 days. To reheat, pop them back in the oven at 350°F until warmed through for the best texture.
  • Freezer: Brussels sprouts can be frozen after roasting, but be aware that they may lose some of their crispiness. Store in a freezer-safe container for up to 2 months and reheat in the oven to restore some of their texture.
