Gluten-Free Red Velvet Cake Bites

You’ve seen them at coffee shops, and probably ordered them for your kid’s birthday but have you ever tried to make cake bites before? It’s actually a lot simpler than you would think.

Cake bites are perfect for celebrations, you get all the goodness of cake without the waste. I can’t tell you how many times someone in my family has purchased a cake for a birthday or celebration and half of it went to waste. In a world where we are all trying to be more conscious about our waste and careful with how we’re spending, cake bites can be the perfect treat to try out yourself.

You can get the full recipe below but before you get started here are some of my quick tips.

• Don’t be afraid to get creative with white chocolate and food coloring, sprinkle choices, or even your cake mix

• Boxed Cake vs. Scratch – Both are great. If you love to bake you may opt for baking a cake from scratch, if you’re short on time pick up your favorite boxed cake no one has to know!

• Toothpicks, Popsicle Sticks, and Straws – all very helpful when trying to dip your cake bites in chocolate coating and easy for those enjoying your finished product to grab and go!

The perfect bite-size treat for any party you're hosting or going to, these red velvet cake bites are so versatile and sure to be a hit!

  • 1 Box Red Velvet Cake Mix, You can make your favorite from scratch recipe like I did but a boxed mix works perfect as well.
  • 1/2 cup Cream Cheese Frosting
  • 1 pinch Sprinkles , For topping!
  • 8 oz White Chocolate or Dark Chocolate Melting Wafers, For dipping!

Instructions

  • 1)

    Bake your cake, either from the box or your favorite scratch recipe. When your cake is made, cool slightly until it’s just warm, not hot.

  • 2)

    While the cake is still warm crumble the cake into a large mixing bowl and combine with 1/2 cup of cream cheese frosting.

  • 3)

    Using a cookie scoop or spoon roll the cake mix into balls and place on a baking sheet that is lined with wax or parchment.

  • 4)

    Freeze your cake balls for at least 1 hour

  • 5)

    After 1+ hours, melt your chocolate wafers according to the directions on the packaging. Dip cake balls using a fork or toothpicks, add sprinkles or your favorite toppings and place back on a baking sheet lined with parchment.

  • 6)

    Store in fridge for up to 3 days, freezer for up to 2 weeks.
