We are deep into winter, the holidays have just passed, it’s likely cold outside and we’ve just started our new year’s resolutions to once again try and eat healthy. Salad is probably the last thing you want to eat and instead, you’re dreaming about soup, comfort casseroles, desserts, you name it.

Ingredients for a Winter Spinach Salad

  • Spinach and a whole lot of it – pack that bowl full whether its for you or a group, there are so many nutrients in spinach you can’t skimp out!
  • Warm Grains – think Quinoa and Wild Rice
  • Pomegranate Seeds
  • Blueberries
  • Apples
  • Balsamic Glaze

Instructions

  1. Cook your warm grains, allowing time if you’re doing it from scratch or make it quick with those lovely 90 second microwave options!
  2. Wash and dry your spinach, place in a large salad bowl
  3. Prepare your fruits by washing and chopping as needed
  4. Top with your favorite dressing and enjoy!

5 Tips for Making a Winter Salad

  1. Use Dark Greens as your base
    • Using dark greens ensures you not only are getting key nutrients but can help to reduce the sensory “cold and crisp” vibe you might get when you use iceberg lettuce.
  2. Add warmth with quinoa or wild rice
    • Since it’s usually cold in the winter months, adding quinoa for a protein boost or wild rice for sustained energy can really warm up a salad to make it more palatable when the weather may not be.
  3. Think seasonal when it comes to your toppings
    • Pomegranates, mandarines, beets, apples, pears, leeks, and brussel sprouts are all seasonal fruits and vegetables that will be easy to find, likely cheaper, and fresh.
  4. Dress your salad to meet your mood
    • If you’re feeling light and happy perhaps olive oil, salt, and pepper will do, but perhaps you want something creamy or sweet, perhaps a balsamic glaze.
  5. Use ingredients that make you happy
    • The key to enjoying any food you eat is to use ingredients you enjoy and that make you happy, keep that in mind and experiment with creating your salad!

  • 1/4 cup of Cucumbers or Bell Pepper (chopped)
  • 5 Mozzarella Pearls 
  • 2 tablespoons of Balsamic Glaze
