Santorini Salad

This Santorini Salad might just be your new go-to. It is incredibly simple, but beautifully delicious and packed with nutritional benefits. I learned the secrets of making this salad at a local cooking class in Santorini, Greece and I’m going to share with you what I learned and how you can make it yourself!

A Trip of a Lifetime

In April, we traveled to Greece and Italy for our honeymoon. Both prime places for foodies to visit, I was eager to try everything! Travel can open up our eyes to many things, including how different the American food system and diet is compared to that in Europe. Knowing this I made sure we had a cooking class in both Greece and Italy, so that we could bring the memories of our travels to our own kitchen here in Colorado. 

Our cooking class was a few days after we had arrived in Greece, we had been trying all sorts of food and a theme began to emerge. Every dish we had was amazing, bursting with flavor and beyond fresh. Greek cuisine if I had to explain it would be primarily made up of vegetables, herbs and spices. Very farm to table as they have kept with tradition of primarily eating what they grow. One of the most interesting things we learned about farming in Santorini is that they can get away with what is called dry farming due to the sea moisture. They don’t have to water like we do here and it’s clear the sea moisture provides a boost of flavor we just don’t get. For example zucchini in Greece are very sweet unlike in the US.  

Now a little about our cooking class. It was located in Megalohori, which is the oldest town in Santorini. Our hosts at To Spitiko Mas took us through 5 traditional recipes in a small kitchen that provided an intimate and personalized experience. I highly recommend the class if you find yourself in Santorini. 

No Leafy Greens Here

Here in the US I have seen many variations of a greek salad, so before we arrived in Greece I was assuming when I saw salad it meant a dish mostly containing large amounts of leafy greens. This Santorini Salad however does not contain any leafy greens but instead focuses on the vegetables within as the star. If you like a salad with some leafy greens however, feel jump on over and checkout my Cream Avocado Salad.

Santorini Salad includes tomato, cucumber, green peppers, onion, olive oil, salt, pepper, oregano, herbs and if you like capers, olives and feta cheese. Our host Elena told us that the most important thing about making this salad is to make it your own. Slice your tomatoes big, or small, leave out the olives if you don’t like, and use whatever herbs you have on hand. Basil is common but I found that adding basil and a bit of mint really lightens up the dish.

Ingredients

  • 3 Roma Tomatos
  • 2 Cucumbers
  • 1 Onion
  • 2 Green Bell Pepper
  • 3 TBS Olive Oil
  • 1 TBS Oregano
  • To Taste Salt & Pepper
  • 1 handful Chopped Fresh Herbs , Basil, Mint, Parsley
  • 1 TBS Capers (Optional)
  • 1/3 cup Chopped Olives (Optional)

Method

  • 1)

    Gather all ingredients based on what you like! Start by chopping your tomato, cucumber, onion and bell pepper

  • 2)

    Toss vegetables in olive oil, salt, pepper and oregano in a bowl, add herbs, capers and/or olives if you choose and enjoy!
