Gluten-Free Chocolate Chip Banana Bread

Cozy and Sweet are the two words that come to mind when I think about this banana bread recipe. My mouth begins to tingle looking at this photo, anxious to grab a cup of tea and take a bite. Food can evoke nostalgia, create comfort, stir up conversation, or even change how you view the world. What making this banana bread means to me, may be totally different to you. That’s the beauty of food.

I grew up on zucchini and banana bread. If it were a rainy afternoon or a cold snowy day, my mom would whip up a loaf or two for us to enjoy. I like to think she made banana bread to create a cozy and comforting atmosphere on cooler days. As the oven turned on the house became warmer, and the smell of warm bananas would waft through the house, inviting you to come out from under your blanket to grab a bite.

If your house is feeling like it needs some warmth this winter and you like the idea of creating a cozy and sweet atmosphere try the following:

  1. Turn on Cooking with Country on Spotify or your favorite music to relax to
  2. Light a candle, the fire, or turn on some warm lights
  3. Put on your favorite sweatshirt
  4. Make a cup of tea
  5. Bake this Banana Bread

Before you know it you’ll be feeling the warmth, scenting your home with the sweetness of vanilla, nutmeg, cinnamon, and bananas, and while you wait for it to bake you can enjoy a cup of tea and curl up in a blanket.

A banana bread recipe sure to create warmth and satisfy any sweet tooth. This banana bread is made using maple syrup instead of cups of sugar.

  • 3-4 Ripe Bananas
  • 2 cups Flour
  • 2 Eggs
  • 1/2 cup Liquid Coconut Oil
  • 1/2 tsp Cinnamon
  • 1 tsp Vanilla
  • 1/2 tsp Baking Soda
  • 1 tsp Baking Powder
  • 1/3 cup Maple Syrup
  • 1/2 cup Chocolate Chips
  • 1/4 cup Milk

    Preheat oven to 350* F

    In a medium size bowl, Mix together dry ingredients (except for Chocolate Chips) and set aside.

    In a large bowl, Mash Bananas using a fork then add the remaining wet ingredients and mix until smooth.

    Combine wet and dry ingredients and stir until smooth, then fold in chocolate chips

  • 5)

    Spray and flour loaf pans and then place in the oven for 55-60 minutes. Timing may vary based on oven.

Notes

  • I frequently use gluten-free 1:1 flour but regular flour works well too!
  • If you don’t like coconut, swap coconut oil for olive oil or vegetable oil
  • Feel free to add walnuts or swap the chocolate chips for walnuts to reduce sugar further.
