Gluten-Free Chocolate Salted Caramel Cookie

My new favorite cookie is the Chocolate Salted Caramel Cookie. It’s perfectly chewy and the sweet and salty combo is next level.

If I had to choose 3 words to describe these cookies they’d be:

• Chewy
• Creamy
• Mouthwatering

After stumbling upon the new salted caramel baking chips at Trader Joe’s, I found this recipe. I swapped out the flour for my gluten-free 1 to 1 and after a quick chill in the fridge, I had a smooth and easy-to-roll dough, which isn’t very common when baking gluten-free.

Along with being delicious, they’re super easy, it took me no time at all and the recipe makes 24 which makes them great party shareable or a treat to send to school with your kids. These cookies will definitely make my year-round list but for now, we’ll consider them my new holiday treat!
