There is always a point in summer when zucchini starts showing up faster than the ideas for using it. This BBQ White Beans & Summer Squash recipe is one of the easiest answers: smoky, saucy white beans with tender zucchini and yellow squash, all made in one skillet in about 15 minutes.

Instructions

  1. Step 1: Prep the beans and squash. Drain and rinse the white beans, then cut the zucchini and yellow squash into similarly sized pieces.
  1. Step 2: Season everything. Toss the beans and vegetables with the BBQ sauce and seasoning in the exact quantities listed in the recipe card.
  1. Step 3: Cook covered. Add everything to a large skillet or Dutch oven and cook covered for the first 5 minutes.
  1. Step 4: Finish uncovered. Stir and cook over medium-high heat for another 5 minutes, until the squash is tender. A silicone spatula helps stir everything without breaking up the beans.

Top tip: Keep the squash pieces similar in size and do not overextend the covered cook time. The goal is tender vegetables, not squash that disappears into the sauce.

Equipment

Use a large skillet or Dutch oven so the beans and squash have enough room to cook evenly. A silicone spatula is useful for stirring gently, and storage containers make leftovers easy to pack up.

  • 1 whole Yellow Squash, diced into quarters

Instructions

  1. Drain and rinse the white beans.
  2. Heat olive oil in a skillet over medium heat.
  3. Dice the zucchini and yellow squash into quartered pieces.
